Shaved ice and homemade syrups make for the perfect seasonal confection

The heat of the summer is finally hitting NYC, and the High Line has your fix. Parked outside Bubby’s High Line at Washington and Gansevoort, you’ll find a charming “snowball cart” that summer strollers of all ages can get excited about. The shaved ice treat, made with Bubby’s handmade, small batch syrups, is drawn from the restaurant’s initiative to defend the American table—and home-style favorites.

The frozen treats, which are conveniently served in a takeout container, are available in 15 flavors and are made with the best possible ingredients. Along with the homemade syrups, the mound of ice is topped with condensed milk for added sweetness. The variety ranges from classics like chocolate and cherry all the way to a limited edition strawberry rhubarb confection.

Feeling the shaved ice fever, yet? Bubby’s chef Ron Silver designed a recipe that you can whip up at home. The Watermelon Lemonade syrup is a mixture of fresh lemon juice and watermelon puree, and it will leave you feeling refreshed on even the most humid summer day.

 

Watermelon Lemonade

Yields 20 glasses

Ingredients

12 cups water (1 of the cups needs to be hot to dissolve the sugar)
2 1/2 cups fresh squeezed lemon juice
1 cup sugar (dissolved in the 1 cup hot water)
4 cups strained watermelon puree (cut and peel watermelon, then puree in a blender and strain through a sieve)

Directions

Dissolve sugar in the cup of hot water. Combine all remaining ingredients. Serve over ice with a big wedge of watermelon for garnish.
