The Seminole Hard Rock’s award winning steakhouse, Council Oak, is home to a number of high-priced bottles only the biggest of spenders would purchase—think Hennessy Paradis Imperial at $9,000, Johnnie Walker & Sons “Odyssey” at $3,000 and more. Though it might be a status symbol, investing in one bottle leaves a host of other amazing whiskies, bourbons and cognacs untapped, which is where the restaurant’s new liquor tasting program comes into play.
There’s no membership requirement for joining the Council Oak One Ounce Club—except an interest in tasting rare spirits and a willingness to spend big bucks to do so. The liquor list features some of the world’s rarest bottles available to taste by the ounce. Though the selection changes slightly based on the availability, current offerings include Glenlivent XXV Single Malt Scotch, Clix Vodka, Papa Andres Brugal, Ciroc X Ten and more.

“One of our favorites is the 1824 Series of Macallan. We are probably the only place in Florida that has access to these bottles,” says Council Oak sommelier Juan Horta. “We have the Macallan Rare Cask, we have the Macallan V5 Reflection, the Macallan Number 6 and the [most prestigious] that they have—the Macallan ‘M.’” The “M” will set you back $14,000 a bottle or $560 an ounce.
The most expensive pour on offer? “Glenmorangie Pride 1978, that one we sell for $18,000 a bottle and $720 an ounce,” says Horta.
