It can take more than a recipe to create a great drink. Sometimes it can take a challenge.
“I was tending bar at my partner’s restaurant in Brooklyn while we were building Boulton & Watt,” Jamie Felber, the beverage director at the Manhattan hot spot explains. “It was the depths of winter, and a customer asked me to surprise her—she loved tequila and champagne. I decided to try a spin on a French 75, replacing the gin with tequila, the honey with agave, and brightening it with an Italian Prosecco.”
The fall cocktail, which Felber finished with a spicy piece of jalapeño pepper, was christened The Mexican Revolver and, lucky for Felber, the customer loved it. So when Boulton & Watt opened on the corner of East Houston Street and Avenue A, Felber was sure to add it to the menu.
“It’s not so big a drink that it can overpower your palate after the first sip,” he says of his creation. “The jalapeno adds just a little kick, which is rounded off nicely by the dry, bright prosecco.”
1 oz. jalapeño
1/2 oz. lime juice
1/2 oz. agave syrup
Shake with ice and double strain. Serve in a Martini glass topped with prosecco and a lime twist.
