As the weather warms up, the best cocktails[1] get lighter and more refreshing. One way to mix a drink to beat the heat is to add the invigorating taste of citrus fruit[2]. Another is to give your cocktail a jolt of something bitter. At the Lambs Club[3], star chef Geoffrey Zakarian’s[4] gorgeous, popular Manhattan boîte, one new specialty cocktail does both.
“The Tremondo is the perfect summer foil,” Zakarian, the chef and a partner at the restaurant, tells us. “Slightly sweet and refreshingly bitter!”

How to make a Tremondo:
1 1/2 oz. Reposato tequila
3/4 oz. Aperol
1/2 oz. Grand Marnier
3/4 oz. grapefruit Juice
Dash of lemon juice
Dash of orange bitters
