The delectable drink boasts a floral layer of chamomile grappa and an aromatic hint of Absinthe, making L’Amico beverage consultants Katie Sipe and Yana Volfson describe it as “pillowy on the palate and refreshingly bright.”

2 oz. Plymouth Gin
¾ oz. Lemon juice
¾ oz. Honey syrup
¼ oz. Marolo Chamomile Grappa Liqueur
¼ oz. Egg white
Shake all ingredients with ice and strain into an Absinthe atomized coupe glass. Garnish with dried chamomile flowers and serve.
