At MAMO Restaurant, the Soho outpost of MAMO Le Michelangelo on the French Riviera, the incorporation of truffles goes well beyond the rich pasta dishes. A cocktail like the Martini Di Tartufo brings the taste of Italian indulgence to a martini glass with a flavorful blend of dry vermouth, Campari and truffle-infused vodka.
“The flavor of the Black Moth Vodka we’re using opens up with the unusual combination of Campari,” says MAMO Bar Manager and Head Bartender Emil Galiev. “We shave seasonal truffle on top to bring an aroma to the nose and add an even richer taste of truffle.”
Here’s how to make it.
MARTINI DI TARTUFO
¼ oz. Dry vermouth
½ Dash Campari
2 oz. Black Moth Truffle Vodka
Pour into a coupe glass and garnish with shaved truffle.
