Get double the buzz on National Coffee Day with this espresso-centric cocktail

If you live by the popular motto “but first, coffee,” chances are National Coffee Day is your favorite day of the year. The day’s festivities could include sipping java from a Central Perk-sized mug at the nearest trendy corner café (cue the Friends theme song), or grabbing a to-go cup filled to the brim with the latest pumpkin brew from your nearest La Colombe Coffee Roaster. But, when happy hour rolls around, you’re probably going to be in the mood to reach for a beverage that’s even more spirited. Perhaps a boozy blend with an extra jolt? This is where the Insomnio cocktail comes in. Hailing from the Arabica bar at Solaz Resort in Los Cabos, this espresso-infused libation offers double the buzz with an exotic touch.

Inspired by the classic espresso martini, the Insomnio is an energetic mix chock-full of flavor, aroma, and stimulation. Itzel Álvarez, the resort’s Resident Cocktail Whisperer, crafted the concoction to highlight a balance of Mexican coffee beans and the Mexican spirit. It starts with a smooth, creamy, and rich taste of coffee, and finishes strong with a kick of tequila.

INSOMNIO:
100ml Tequila 7 Leguas Reposado
15ml Dubbonet
30ml Coffee Liquor
30ml Espresso
Pinch of Salt

Preparation: Add the ingredients into a shaker with ice and shake. Fine-strain into a chilled cocktail glass. Garnish with three coffee beans.
