First up, meet the gorgeous copper CARL stills. Wilma is on the right, she was our first still. And her big sister Jude is on the left. Our distiller and co-founder Cam is here bright and early before anyone else. So much gin to make, so few hours in the day.
We couldn’t make our gin without our trademark botanicals. Along with juniper berries (of course) we use local Tassie pepper leaf and native lemon myrtle, along with Asian spices like star anise and coriander seeds, to create gin that we feel represents modern Australia.
This is our Rare Dry Gin, first born (and still favorite) of the Four Pillars family. Made with whole organic oranges, it truly is the heart and soul of what we do. It totally rocks in a G&T with a slice of fresh orange.Oh and just quietly it's picked up the Double Gold Medal in San Fran two out of the last three years.
Enjoying a quiet moment in our distillery door before we open the doors for the day. We seriously love it here. It's the perfect spot taste and talk gin, and hang out with a few legendary cocktails while watching Cam, Wilma and Jude do their thing in the distillery. Oh and there’s gin cheese, if you get peckish.
We're open, and first up, it's time to get the tasting bench ready. We don't make gin, we make gins, and we love sharing just how much diversity we can get out of a juniper berry. We now have seven unique expressions of our favorite spirit, so come by for some gin tasting and talking soon, ya hear?
Done with tasting? It's time for a drink, or maybe three drinks in one. Folks love our gin paddles...three mini G&Ts, each with a different gin, garnish to match, and a bottle of Fever Tree Tonic Water. Because, why should we make you choose one gin, when you can have three?
