What’s your favorite red food?
Mario Batali: My favorite red food is the tomato. It’s the easiest one. I love anything with tomatoes in them—I like raw tomatoes, I like tomato sauce, I like pizza with tomatoes, I like chicken cacciatore. My grandma used to make a quick marinara, and then she would simmer oxtails in it for an hour and a half. And that was one of my favorite things.
What’s something that makes you red in the face?
Mario Batali: Running up stairs at high altitudes. And red wine! Too much red wine too quickly and I get a very red face. And anger probably does it. In the kitchen, it’s laziness—when people aren’t free and energetically involved in the world they’re spending their time in, it drives me crazy. I used to yell, but I don’t usually yell or get huffy anymore when things are out of control. When I walk into a kitchen nowadays, I’m a calming influence. When I was younger, I was more destructive.
