Drink DuJour: The Dino

A modern day Las Vegas hot spot pays homage to a Sin City legend. Here’s how to make it

“The theme of our cocktail menu at LAVO is a history of Las Vegas through cocktails,” Beverage Director Tim Keller says. It’s a combination of drinks that were popular during certain time periods or a cool story of something historical that happened in Las Vegas. “

Considering the venue’s location, it makes complete sense. “The Venetian/Palazzo is the former Sands Hotel that housed the Copa Room,” Keller explains. “This was where the Rat Pack played while in Las Vegas.”

So, when Keller came across a Dean Martin biography that revealed the legendary performer wasn’t ever drinking alcohol on stage—just apple juice—he took that as a cue to create a drink in Martin’s honor.

 

The Dino

2 oz. Calvados
¾ oz. grenadine
1 oz. lime juice
2 dashes Angostura bitters
1 splash egg white
1 oz. Stella Artois Cidre
1 slice dehydrated apple

Combine all ingredients except Stella Cidre into a mixing glass, shake vigorously with no ice and then strain simultaneously with Stella Cidre into coupe glass. Garnish with dehydrated apple slice.
